  2. What is the right size and capability of the food truck you need  ?  For some people an appropriate step is a  cart or concession trailer and for others it might be a full blown food truck ,.
  3. What is the projected investment and be sure to include all the costs including soft costs  .   You should also budget a reserve fund .
  4. How will the investment be funded ?
  5. What is the equipment plan and is it calibrate for the contemplated menu and volume .
  6. What does the local food truck competitive landscape look like and how will your concept fit and perhaps fill a void ?
  7. What are the state and local permitting laws and health inspection requirements  ?
  8. Its important to understand what your break-even is .  
  9. You need a human resource plan .   What positions are required , for how many hours per week and when ?   
  10. What is the marketing and social media plan .
  11. Make sure you understand the impact of operating a successful food truck on your lifestyle .     For many food trucks the highest potential operating times might be evenings and weekends .  For others it might be early mornings .
  12. What is the long term plan.   Is it to use a food truck as a stepping stone toward a bricks and mortar operation or another food truck .

Country Club Venue in Central Kentucky
              An opportunity exists for a restaurant entrepreneur to own and operate their own casual theme restaurant business in central Kentucky .      
              The Winchester Country Club    http://www.winchester-cc.com/    is a long established country club in Clark County , KY with outstanding golf , tennis and swimming pool facilities .  However, due to changes in trends , demographics , etc.,  their old business model which included a dining room service supported by member “minimum charges “  does not work anymore .  Often, the restaurant would be open but so few members showed up for lunch or dinner the staffing impact made the dining room  business not financially sound .    Therefore the Board of the Club has decided to not only outsource this function but open up the restaurant to the public .  This creates a great opportunity for the right person or entity to establish their own business in this location and work with the club to create a “win win “ relationship.

6.  Based on my analysis of the market and conversations with two board members  an appropriate menu would be similar to Ramsay’s in Lexington ……..quality reasonably priced comfort food .
7.   Appropriate signage would need to be agreed upon
8.  There is plenty of room for BBQ smokers , etc.
9. The operator could use this location for a base for catering business
