Food Commodity Prices and Food Cost
Food commodity prices are looking pretty good right now so if a restaurant operator is having food cost issues there must be other causes including but not limited to :
- Menu pricing
- Menu organization
- Internal theft
- Portion control
- Purchasing
- Marketing and Advertising ( are you focusing attention on the right menu items ? )
Food Cost plus Labor Cost equals Prime Cost and Prime Cost should be the cost summary item on a restaurant P&L that should be monitored frequently .
